Hey guys! As y’all know, I love to try new things. Last week, I spotted some Cactus Fruit (aka Prickly Pears) and decided to have a go at cooking them. I’ve tried them before, raw in a salad, but never cooked. They have a taste like a sweet ripe kiwifruit.
This recipe takes advantage of the sweet tropical taste, pairing it with orange and ginger. It’s great with chicken, turkey or pork!
You will need:
- 2 cactus fruit, peeled and diced
- 1 orange, peeled and diced. Make sure you get as much of the white stuff of as you can! It’ll make the sauce taste weird otherwise.
- 1/2 t ginger powder
- 1/4 t nutmeg
- 2 T butter (or Ghee)
Put everything in the pan on medium-high. Toss as the butter melts. Turn down to low heat, break up the fruit with a wooden spoon or a masher.
Cover, and stir occasionally. Simmer for about 15 mins. After it’s done, let it sit for about 20 minutes to thicken.
Serve with meat. This recipe freezes well.
