Here’s a quick one for you guys. This was tasty but as it turns out, i’m allergic to Okra! In any case, it’s a quick and easy snack recipe.
It’s a rich, exotic turn on a popular Southern vegetable. This recipe is mildly spicy (by my standards) so adjust the amount of seasoning to almond ratio to taste.
You will need:
- 200g fresh okra (About 2 cups)
- 1 egg, beaten
- 1 cup almond flour
- 1 T madras curry powder
- Pinch sea salt
Preheat oven to 400.
Mix the salt, madras and almond flour in a bowl.
Dip okra in egg, then dredge in the flour mixture.
Bake for about 20mins, or until the almond browns. (Bear in mind it will look yellow from the curry powder. So browner than that.)
This would make a great side dish for Thanksgiving or ‘finger food’ for Halloween. Enjoy!
