Easter Noms: Sunflower Butter Bird’s Nests

These yummy Easter desserts only have four ingredients and are so easy, your drunken Uncle Bob could do it. On that note, kids will love it too. as you well know, kids are basically tiny energetic drunks.

Makes about 6-9 depending on how big you make them.

You will need:

  • 1- 1 1/2 cups sunflower butter
  • 2 cups shredded coconut
  • 1 Tablespoon maple syrup or liquid sweetener (Can be skipped to be Whole30 compliant)
  •  At least the same number of pitted dates as the number of nests you plan on making – I suggest about 12. If you’re anything like me you’ll eat the extras anyway. I’ve also used California grapes for this.

Step one:

Mix everything in a bowl, except the dates, and 1/2 cup of coconut.

Step two:

Realize you probably should have used a spoon, and not your hands to mix it. It doesn’t matter, because the next step is shaping the mixture into golf ball sized things. Place on a plate or tray and use your thumb to press a depression in the middle. Don’t let the cat do it, no matter how interested he looks in the food. Sunflower butter is not fun to get out of fur.

Place dates in the middle like eggs, and put in the fridge for about an hour or two and they will be less sticky, and easier to eat.
