Hey guys! I love cooking seasonally, and apart from being cheaper and more budget friendly, it forces me to think of new ideas frequently.
Today, I paired a sweet, herby mango filling with beef. It’s a quick lunch or dinner dish that anyone can master and customize.
You will need:
- 1 large fresh mango, peeled and diced
- 1 T ginger powder
- 3-4 sage leaves
- 1 T dried basil
- 2 rouladen cut beef sheets (or thinly sliced raw beef)
Preheat oven to 400.
Toss the mango with the ginger, torn up sage and basil. Season with salt and pepper.
Mash. Some small chunks are fine.
Spread the paste on the beef generously on one side, but no thicker than 0.5 cm, or it’ll be hard to roll!
Gently roll the beef. It doesn’t need to be tight, just firm enough that it’s not spilling out. Tuck the ends underneath. Bake in the oven for 30 mins.
