New Zealand Lamb Stirfry with Zucchini, Lemon & Dill

Hey guys! It’s finally Spring here in Canada and we’ve just started getting in some nice seasonal produce. So, I thought I’d do something quick and simple, but a little different.

This is a lamb stir fry inspired by the flavours in Greek food. Lemon, dill, with a hint of fresh crunchiness from the zucchini. This recipe servers about 3-4 people.

You will need:

  • 2 medium zucchini, sliced
  • 1kg lamb stew cubes
  • 2 cups button mushrooms, sliced
  • 1/4c lemon juice
  • Onion powder
  • Garlic powder
  • Salt and pepper
  • 3tsp Fresh or dried dill

Step one:

Brown the lamb in a large wok. Add the mushrooms. Season with onion/garlic/salt & pepper to taste.

Step two:

Add the zucchini, dill and lemon juice. Make sure it’s tossed evenly. Turn down to medium heat.

Step three:

Serve! Best eaten while lazing about in the sun with a cool drink.
