Parmesan & Rosemary Cucumber Fries

Here’s a quick summer snack, when it’s just too hot to prepare anything fancy!

Crispy, cheesy and oddly refreshing cucumber fries. They’re also a great after school snack to get that salty snack craving 🙂 You can make this with zucchini as well – it’s all up to your personal preference!

Note: Also good with carrots, parsnips, yams and squash!

You will need:

  • 2 cucumber or zucchini, cut into fry strips
  • 1 egg, beaten
  • 1 c almond flour
  • 1 T parmesan cheese, powder or shredded finely
  • 1/2 t salt
  • 1 T garlic powder
  • 1 sprig rosemary

 

Step one:

Set up the ingredients. Egg, beaten in a shallow bowl. Almond flour, cheese, salt, rosemary and garlic mixed thoroughly in another shallow container (I used a long tupperware container)

Step two:

Coat the cucumber strips in egg, with one hand. Use the other hand to dredge it in the flour mixture. Be careful not to cross over, or it gets messy!

After dredging, lay the strips, skin down, on a baking tray. Broil for about ten minutes, or until browned and starting to crisp up. My broiler is older than the hills, so yours might be quicker.
