Raspberry Cocoa Truffles

Hey guys.

This post is dedicated to Joanne, who runs the amazing Just Eat Real Food page. It’s her birthday today, and in honor of this very special occasion of her doing another lap around the sun, I’ve made a yummy dessert of her favourite things – raspberry and chocolate!

These truffles are a delectable paleo treat, and can be made ahead. They store well in the freezer, and when at room temperature, have a fudgy texture that’s just amazing!

You will need:

  • 2 c Parnoosh (Or Medjool, only difference is size) dates, deseeded
  • 6 oz/roughly 170 grams fresh raspberries
  • 1 t vanilla extract
  • 2 T cocoa powder
  • 1/2 t kosher salt
  • 1 c almond flour 

Step one:

Everything except the almond flour goes in the processor. Blend until it’s a thick paste.

Step two:

Using a shallow container or plate, use a spoon to form balls with the mixture, and coat with almond flour. Set aside in a container in the freezer for about an hour.

Easy peasy, right? you’ll thank me later when you need an impressive dessert!
