Hey guys. Today’s dish is super simple and budget friendly. Set it and forget it while you’re working; and pop out a delicious melt in your mouth meal afterwards.
Pork bones are usually a budget cut, but with the right prep, it can taste like a more expensive one. The trick is to deal with all that sinew and gristle. We’re gonna use some acidic ingredients like tomato and wine to help break this down and tenderize, while adding some awesome sweetness and umami flavours! What’s umami you say? It’s the fifth taste, commonly described as ‘richness’ or depth of flavour.
You will need:
- 1 lb/0.5kg pork neck bones
- 1 small can tomato paste
- Salt & pepper
- 1 head garlic, peeled
- 1 white onion, diced
- 2 carrots, diced
Add red wine to crockpot. Lay pork bones fatty side down. Season generously with salt and pepper. Add the rest of the ingredients, and slow cook on high for 6-8hrs.
Remove the bones (they should just slip out at this point) and serve.
Simple huh? It’s brilliant served aside some fresh veggies, as you’ll want to balance out the richness with something lighter.
