Hey guys! This week’s recipe is a simple way to kick up chicken a notch. Did you know kiwi fruit goes really well with chicken? Fruity freshness + animal protein is one of my favourite pairings.
This time, I paired a spicy chipotle seasoned chicken with a fresh, tarty, but somehow smooth kiwi-coconut sauce. If you’ve thought of trying something new with your cooking, this is a fun place to start!
You will need:
- 6 chicken drumsticks
- 1 t chipotle powder
- 2 t onion powder
- 2 t garlic powder
- Salt & pepper
- Ghee or coconut oil to grease pan
- 2 fresh kiwi fruit, peeled and diced
- 1/2 c coconut milk
- 1 t maple syrup
Preheat oven to 375. Grease a roasting pan, place drumsticks with the ‘meatier’ side up.
Season generously with salt, pepper, chipotle, onion and garlic. Drizzle with ghee or coconut oil lightly. Pop it in the oven for 45 mins.
Blend kiwi, coconut and maple until it’s a smooth sauce. Sometimes I actually just whip it with a fork, so it’s mostly smooth but there’s still some chunks. Serve cold, dolloped over the hot chicken.
