Strawberry-Kiwi Freezer Pudding

Hey guys! As you know, i’m doing two recipes a week now. This one is a sweet, slightly tart fruit pudding. It’s gluten and dairy free, and it’s a great summer snack you can make and refrigerate ahead of time.

You will need:

  • 2 heaped cups strawberries, diced
  • 2 frozen, peeled kiwi fruit, diced
  • 2T raw honey
  • 1 small can coconut cream OR chill a can of coconut milk, skin the thickened cream off the top.
  • 1/2 cup water
  • 2 sachets gelatin/pectin
  • 1t coconut oil (*I used butter, but for dairy free use coconut)

Step one:

Lightly sauté the strawberries and kiwi fruit in coconut oil til softened. Add honey; simmer on low for about 30-45 mins until it’s all nice and squishy.

Step two:

Add the pectin/gelatin, and coconut cream. Stir thoroughly and let cool. Blend in a processor until smooth.

Pour into serving bowls, and put it in the freezer for about 1 hrs, or until it’s set like jelly!

Serve while lazing outside in the sun.

    sounds good. I was playing around, sliced strawberries and kiwi poured honey on it for a breakfast. thought about sautéing it in coconut oil hot and fast. great to see this wasn’t a bad idea.
