Hey guys! As you know, i’m doing two recipes a week now. This one is a sweet, slightly tart fruit pudding. It’s gluten and dairy free, and it’s a great summer snack you can make and refrigerate ahead of time.
You will need:
- 2 heaped cups strawberries, diced
- 2 frozen, peeled kiwi fruit, diced
- 2T raw honey
- 1 small can coconut cream OR chill a can of coconut milk, skin the thickened cream off the top.
- 1/2 cup water
- 2 sachets gelatin/pectin
- 1t coconut oil (*I used butter, but for dairy free use coconut)
Lightly sauté the strawberries and kiwi fruit in coconut oil til softened. Add honey; simmer on low for about 30-45 mins until it’s all nice and squishy.
Add the pectin/gelatin, and coconut cream. Stir thoroughly and let cool. Blend in a processor until smooth.
Pour into serving bowls, and put it in the freezer for about 1 hrs, or until it’s set like jelly!
Serve while lazing outside in the sun.
