Hey Strangekittens! This week’s recipe is an Almond Satay Burger. It’s a big hearty beef burger patty, with a slightly nippy almond satay sauce, sautéed mushrooms and spinach.
You will need:
Burger
- 1lb ground beef
- 1 egg
- onion/garlic powder
- salt & pepper
Sauce
- 1/2 cup almond butter
- 1/2 can coconut milk
- 1tsp cayenne pepper/chilli powder
- 1tsp butter
- salt
- 2Tsp maple syrup (optional)
Garnish
- Roughly a handful for each burger – Fresh baby spinach
- 1 cup fresh sliced button mushrooms
Step one:
Mix all the burger ingredients together. Shape into patties. I made four, but you can just make 2 giant ones if you want! Cook these to whatever your preference is. I oven bake them to medium, because I don’t have a grill yet.
Step two:
In a saucepan, slowly mix all the sauce ingredients on a medium heat until combined. Let it simmer for a couple minutes, then take off heat and allow to thicken.
Step three:
Sautée the mushrooms and spinach in butter until the spinach has wilted slightly.
This is how I plated it for maximum nom factor!
