Hunter Stew

Hey guys, this is something I used to make when I was younger and staying with my grandfather. There was always a surplus of meat, veggies and oddly, berries. Did you know many berries actually taste really nice with red meat? Try it, it’s wonderful!

You will need:

  • 2lbs cubed beef
  • 2handfuls fresh blueberries
  • 2C baby carrots, sliced in half lengthwise
  • Butter
  • Coconut oil for frying
  • Salt/pepper/oregano/garlic powder
  • 1 large onion, sliced in semicircles
  • Optional: Red wine and Worcestershire sauce

Step one:

Brown the beef in coconut oil, and put on a medium simmer with the onions while that all softens up. Once that’s done…

Step two:

Throw in the seasoning. Season to taste, I personally use a LOT of garlic. The carrots can go in too. Add half a cup of red wine, and a splash of Worcestershire sauce. Add enough water so the meat is mostly covered.

Let this all stew for about 30mins on a medium heat.

Step three:

Add the berries in the last ten minutes, with a teaspoon of butter to coat.

Step four:

When the carrots are fork tender…serve, and nom that deliciousness!

    I made this last night for dinner and it was so quick and easy. It’s great for a weeknight meal because there is not a lot of prep time and not a ton of ingredients. My husband loved it and went back for thirds!

    This was so perfect! Blueberries were such a nice touch. Added siracha, lime juice, mushrooms, bell peppers, and minced garlic to give it some muscle.

    Would this work as a crock pot meal? Any suggestions on making it work that way?

      Good question, and to be honest, I’ve never tried it that way! I suppose you could do, but put the blueberries in maybe half an hour before it’s done, so it doesn’t overpower everything else.

      I tried this in the crock pot last night. I just put all of the ingredients in the crock pot and added water to fill over the meat. I cooked on low for 8 hours. It was awesome! I just added extra seasoning to give the broth some flavor. The meat was so tender and just fell apart.

    Made this and was pretty disappointed. There was no real flavor. Perhaps I used too much water?
