Hey guys. This recipe, although not the most attractive dish, is absolutely delicious!
A big, crispy honey-garlic chicken breast, smothered in a flavourful chunky tomato and bacon sauce. Yes, bacon.

You will need:
- 2 cups diced tomato
- 1 small can tomato paste
- 3-4 strips of good quality bacon (no, not the maple kind)
- 2 large chicken breasts, skin on
- Fresh basil leaves – about a tablespoon
- 1/2 teaspoon oregano
- Garlic powder
- Onion powder
- Raw honey
- Salt and pepper to season
- Coconut oil
Step one:
Dump everything EXCEPT the chicken & honey in the pot. Season with salt, pepper, garlic and onion powder. Be generous! Set on a medium simmer for about 45mins. Now for that chicken…
Step two:
Preheat oven to 425. on a lightly greased pan, place the chicken breasts skin side up. Rub generously with garlic/onion powder, salt and pepper. Drizzle with honey (about a teaspoon, some of it will melt off). Pop it in the oven for 30-45min; depending on the size of your chicken boob. Prick it with a fork, if the juices run clear it’s done. If there’s pink, keep baking.
Step three:
OM NOM NOM BIRD PILE! Have fun mopping up the yummy sauce with the chicken. This would be great with some roasted veggies too!
