Slow Cooker Beef Stew (Poverty Stew)

Hey guys! This is something I make on a regular basis, it works with just about any meat and veggies – I also call it ‘poverty’ stew because it’s what I make when I’m trying to make the food stretch a bit further.

This makes enough for two people, and can be done with even the cheapest cuts of meat.

 You will need:

  • 2lbs raw beef roast – leave the fat on, if any
  • 1 large onion, quartered
  • 1 garlic head, peeled
  • 3 large carrots, roughly chopped into chunks
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 small can tomato paste
  • 1/4 cup tapioca flour (optional, for thickening)
  • 2 cups red wine (optional but recommended. Sub for home made beef stock if not using)

It’s basically a one pot meal – dump everything in the crock pot, leave on high for 8hrs, ta-dah, yummy stew! I like to pull apart the beef when it has about an hour left; it’s generally pretty soft and will pull apart with a fork.

Stir it every couple hours, if you can, to scrape off the sides.

This is even better the second day, and makes a great lunch on a cold day.

    Can you sub coconut flour for tapioca

      You could, but it won’t taste the same. I don’t always use it; it just depends on if you want it a little thicker or not.

      you could probably use arrowroot starch.

    Do you have to brown the meat first?

      You don’t have to, but it’ll taste better if you do.

    This was flipping awesome! I’m following a Paleo diet and this is perfect. I do all the cooking so so I also made some Jasmine rice for my wife and she couldn’t get enough. Easy and delicious!
